Turkey Picatta

Ingredients
Artichoke Hearts frozen or jars; Turkey breast w/out skin; frozen peas; mushrooms, onions; lemon juice; flour as needed for thickening and to coat turkey; olive oil for sautening.
Directions
Saute mushrooms and onions in olive oil till soft; remove from pan. Cut turkey cutlets into strips, dust lightly in flour. Saute in olive oil til just done (2 - 3 minutes). Return veggies to pan, add artichokes, defrosted peas, lemon juice. Add chicken broth and flour to thicken into a sauce. Serve over rice.
