Broccoli Soup

Ingredients
2 med onions1 clove garlic minced2 bunches broccoli and stems4 c. chicken broth1 c fat free evaporated milk10 small dashes Tobasco sauce1/8 tsp salt1/8 tsp pepper
Directions
Put onion and garlic in sauce pan with 1/4 c. water and simmer until onion is soft, about 10 min. Spoon into a large pot. Add broccol and broth to onion mixture and bring to a boil over igh heat. Reduce heat and simmer until broccoli is soft but still green. About 8 min. Remove from heat and place in blender until smooth. Add evaporated milk and tobasco , season with salt and pepper

    Change it to lowfat/low sodium chicken broth & you cut much of the sodium. You can add some fat free/reduced fat velveeta and make Broccoli-Cheese soup also. - 10/24/08
