Carrot-Ginger Vinaigrette

6 Tbsp. water1/4 cup canola oil3 Tbsp. rice vinegar2 tsp. soy sauce1 1/2 tsp. sesame oil1 small carrot, peeled and shredded2 tsp. minced shallot or red onion1 small garlic clove1 1/2 tsp. grated fresh ginger1 tsp. (unpacked) brown sugar1/2 tsp. salt
Directions
Put all ingredients into a bowl and puree with a hand-blender until smooth.
