Crock Pot Lemon Chicken

Ingredients
2 boneless, skinless chicken breat halves1/4 cup fat free, reduced sodium chicken broth1/4 cup lemon juice2 T unsalted butter1 T italian seasoning3 garlic cloves, minced1 T garlic powder1 T onion powder1 t salt1 t pepper
Directions
Slice chicken breast halves in half, lengthwise. Season chicken with salt and pepper. Melt butter in skillet. Brown chicken on both sides. Remove chicken and place in crock pot. Add chicken broth to skillet to loosen bits, and pour liquid over chicken in crock pot. Season chicken with italian seasoning, garlic powder, onion powder and garlic cloves. Cover and cook on low for about 4-5 hours. With one hour remaining, add lemon juice and allow to cook for last hour. Chicken will be fall apart tender.

    The chicken came out very tender and juicy. I added a little more chicken broth to this. My crockpot is huge and a 1/4 cup of broth was not enough to simmer these chicken breasts in. I put in about a cup and was happy with the extra sauce. - 7/11/07

    This was very good and easy to make. My family loved it. My husband did say a little less garlic next time. Was fine with me but next time will cut the garlic in half for hubby. Worth trying!!!!! - 6/5/07
