Zucchini Tomato pasta

Ingredients
1 box angel hair pasta 1 large or 2 med zuchinni (2.5 cups, sliced into quarter size pieces)1 medium vidalia or sweet onion, diced4-5 roma tomatoes, sliced into quarter size pieces1-2 T minced garlic2 tsp italian seasoning3 T extra light olive oil1 tsp adobo seasoning (can substitute garlic powder and regular salt for this)
Directions
cook and drain pasta according to directions on package.

In seperate frying pan, add 1 T oil and zuchinni. Sautee for about 5 minutes on medium heat. Add onion, garlic, and adobo and sautee for an additional 3 minutes. Add tomatoes and sautee until all veggies are to your desired crunchiness. Sprinkle with italian seasoning and add remaining oil.

Dish up pasta into 1 c. portions and divide tomatoe/zuchini mixture and place on top of pasta. Can be served warm or cold.

Makes approximately 8 1.25 c. servings

you may use whole wheat pasta for this, but this recipe was calculated with regular pasta.
