Sweet & Spicy Thai Chicken

Ingredients
1.14 lb chicken breast, skinless, boneless1" ginger root2 cloves garlic2" lemon grass2" cilantro root2 tsp PC Omega Oil2 Tbsp Fish Sauce1 tsp Gluten Free Soy Sauce, reduced sodium (San-J)1 tsp tamarind paste1 tsp golden sugar
Directions
Pound ginger, cilantro root, garlic, and lemon grass in a mortar and pestle with a pinch of salt until soft. Cube chicken and combine all ingredients in a bowl and marinate. Stir Fry on medium. Makes 4 servings.
