Greek Salad Skewers

Ingredients
SKEWERS12 bamboo skewers24 cherry tomatoes3 oz feta cheese, cut into 12 (1/2- inch) cubes12 kalamata olives, pitted½ small red or sweet onion, cut into 12 (1/2-inch) pieces1 can marinated artichokes, rinsedVINAIGRETTE2 tsp lemon juice2 tsp red wine vinegar4 tsp fresh oregano, chopped2 Tbl extra virgin olive oilsalt and pepper
Directions
SKEWERS: Thread skewers starting with tomato, then artichoke, feta, an olive, onion and another tomato.

VINAIGRETTE: In a small bowl, mix together lemon juice, vinegar and 2 tsp oregano. Whisk in oil until mixture thickens. Season with salt and pepper to taste.
Arrange skewers on a platter. Spoon dressing over skewers and sprinkle with remaining oregano.
