Doesn't taste good for you Chicken Enchiladas

3 Chicken Breasts - no skin1 T. Olive Oil1 onion chopped1 4 oz. can green chilies2-3 T. Chili Powder2-3 t. Ground CuminGround Red Pepper to taste (I like a lot)Little bit of salt and pepper4 oz. Low Fat Cream Cheese8 Whole Wheat Tortillas1 Can Stokes Green Chilie Sauce with Pork1 C. Light Sour Cream1/2 C. Shredded Cheese
1) Chop onion
2) Add olive oil to pan and saute onion for 2-3 minutes
3) Add green chilies & chicken breasts
4) Season with Chili Powder, Cumin, ground red pepper, salt & pepper
5) Cook until Chicken is done.
6) Remove chicken from pan and shred with two forks
7) Remove onion/green chilie/spice mixture from pan and put into a bowl
8) Add cream cheese and shredded chicken - mix
9) Add filling to the 8 tortillas and roll into enchiladas
10) place in shallow 9x13 pan - spray with a little non-stick spray first
11) mix can of green chili sauce and low fat sour cream
12) pour over filled tortillas
13) Cook in a 350 degree oven for 35-40 minutes
14) sprinkle cheese over the top and melt
15) Enjoy - Makes 8 servings

This recipe sounds good....
But tell me, where do you find stokes green chili sauce with pork? If I cannot find it here, what do you suggest as a replacement? - 8/10/09

You can really use any canned green chili sauce you find in the mexican section at your grocery store. I often use different kinds - they had the Stokes listed in the nutritional area, so I chose that kind. Maybe I should have listed it in more generic terms, but feel free to use whatever you find!

I have made a similar recipe from Campbell's soup, but my husband liked this one better. It's a keeper. I halved the sour cream and chile sauce so less calories and sodium and it turned out just a touch dry so will add more chile sauce next time. And there will definitely be a next time. - 1/7/10
