Greek Barley Salad

Ingredients
Barley, pearled, cooked, 1 cup *Extra Light Olive Oil, 3 tbsp *Imagine Organic Vegetable Broth, 2 cup *Peppers, sweet, red, fresh, 3/4 cup, choppedCucumber, 3/4 cup choppedCherry tomatoes, 3/4 cup sliced Onions, raw, 1/2 cup, chopped Kalamata Olive- 1/4 cup pitted and sliced*Imagine Organic Vegetable Broth, 3 Tbsp *Lemon Juice, 3 Tbsp*Extra Light Olive Oil, 1 tbsp Oregano, ground, 1 tsp Salt, 2 dash Pepper, black, 2 dash Garlic, 1 clove crushedFeta Cheese, 2/3 cup, crumbled
Directions
bring 2 c vegetable broth to a boil.
add barley, cover, lower to simmer and cook 12 minutes until barley is tender.
remove from heat, drain if necessary, cool completely.
combine barley, peppers, cucumbers, tomatoes, onions and olives in a bowl.
combine broth, lemon juice, garlic, oregano, salt and pepper, stir well and add to barley mixture, toss well.
add feta cheese, toss.
