Mediterranean Salmon

3 salmon fillets (5-6 ounces each) (thawed if frozen)1/2 red onion, thinly sliced and separated into rings1 clove garlic, mincedabout 15 grape tomatoesabout 8 kalamata olives1/2 jar marinated artichoke hearts, drainedherbs de Provence1/4 teaspoon each kosher salt and pepper
Place red onion slices in the bottom of a casserole dish. Place the salmon on top of the onions. Sprinkle with garlic, kosher salt, pepper, and 1/2 the herbs de Provence. Top with tomatoes, artichoke hearts, and olives. Sprinkle with remaining herbs. Cover with foil, but leave space for steam. Bake for about 20 minutes at 375 degrees.

Wasn't sure how this would be, with all that onion! I doubled the recipe.I like salmon and the kids won't eat it. I put salmon on one side of a 9X13 glass baking dish and chicken on the other. 35 minutes later, it was awesome, everyone loved it! Question: there's no amount given for the herbs? - 11/4/09
