Bran Flax Muffins

Ingredients
3/4 cup Whole Wheat Flour3/4 cup Unbleached White Flour3/4 cup Ground Flaxseed Meal3/4 cup Oat Bran3/4 cup Brown Sugar2 tsp Baking Soda1 tsp Baking Powder2 tsp Cinnamon, ground1 1/2 cups shredded Carrots2 Apples, shredded1/2 cup Raisins3/4 cup Milk, 2%1/2 cup Egg Substitute1 tsp Vanilla Extract
Directions
1. Mix together dry ingredients in large bowl.
2. Shred carrots and apples and stir into the dry mix
3. Combine milk, beaten eggs and vanilla and pour into dry ingredients
4. Stir until moistened through, do not overmix
5. Fill muffin cups 3/4 full
6. Bake at 350 for 15-20 minutes

Makes 18 medium sized muffins.
