2 cups of sugar3 cups of whole wheat flour1 teaspoon of salt1 teaspoon of baking soda1 teaspoon of ground cinnamon1/2 Tablespoon of baking powder1 Tablespoon of flax seed1 cup of unsweetened applesauce2 whole eggs1 teaspoon vanilla extract.1 teaspoon mapleine - might find in baking aisle with pancake syrup1 tablespoon canola oil2 packed cups, well-drained shredded zucchinicooking sprayflour for dusting pans
Preheat oven to 350 degrees. Mix sugar, flour, and all other dry ingredients together. Add eggs, applesauce, and flavorings. Shred the zucchini, drain well, pack into 1 cup measuring cup, you need 2 cups. Add zucchini to mix. Stir together. Spray loaf pans with cooking spray, lightly flour. Divide mixture into 3 pans. You can use 2 if you want them larger, but that would change nutritional info. Bake 35-40 minutes for 3 pans, until toothpick comes out clean. Each loaf should make approximately 12 slices. 36 servings total.
