Chocolate Mint Zucchini Cookies (vegweb recipe)

3 Cups Whole Wheat Flour2 Tsp. Baking Soda1/4 Cup Cocoa1/4 Tsp. Salt1 1/2 Cups Sugar2 Tbsp. Oil1 Tsp. Peppermint Extract
Mix together flour, baking soda, cocoa & Salt. In a separate bowl, using electric mixer beat together sugar, oil & peppermint extract. Fold in zucchini. Combine dry & wet ingredients & mix until everything is smooth.
Using a tablespoon, scoop out batter & form a small ball. Press lightly to help flatten.
Bake at 350F for 12 minutes.
Makes 50 cookies
