Low Cal Flaxseed Pancakes

1 cup unbleached all purpose flour (can replace 1/2 cup with whole wheat or oat flour)1 tsp sugar1/2 tsp baking soda1/4 tsp salt1 - 2 tbsp of ground flaxseed (can swap out with oat or wheat bran)1 egg1/2 cup low fat plain yogurt3/4 cup 2% milk2 tbsp safflower oil (or any veg. oil)Vegetable spray
Combine dry ingredients in a medium bowl of large measuring cup with a pouring spout. (you'll be able to pour pancakes straight onto the skillet).
In a separate bowl or large measuring cup, combine yogurt, milk, oil and egg. Gently stir into dry ingredients without beating (beating makes for tough pancakes). Let sit a minute. If the batter is not of a ribbon consistency, gently add a little more milk, a tablespoon at a time.
Coat skillet or griddle with cooking spray over medium heat. For each pancake pour out 2-3 Tbps of batter or until it equals about 4 inches in size. Turn pancakes when tops are bubbly and edges slightly dry. Yields 12 pancakes at 78 calories each.
