Spicy Rice, Bean, Chicken & Cheese Skillet

Ingredients
1 1/2 cup green bell peppers, chopped3 cloves garlic, minced1 Tbsp olive oil1 can (10 oz) diced tomatoes and green chilis, undrained1 can (15 oz) black beans, drained, rinsed1 1/4 cups water2 cups Minute Brown Rice, uncooked1/4 cup cilantro, chopped1 pound boneless, skinless chicken breasts, cooked & chopped1 cup low-fat shredded Colby and Monterey Jack cheese
Directions
Cook and stir green peppers and garlic in hot oil in large skilled on medium high heat 1 minute. Add tomatoes, beans, and water; mix well. Bring to boil. Stir in rice. Reduce heat to medium low; cover. Simmer 5 minutes. Remove from heat. Stir in cilantro & chicken, top with cheese. Let stand covered, 5 minutes

    This was really good and very easy to make. I used fresh chicken breasts, cooked them first and then used it in the recipe. It is really good the way it is but next time I would add some cumin and coriander to it to give it a more Southwest flavor. - 8/11/09
