Red Beans & Rice

Ingredients
1 Lg. Onion ( chopped )1/2 C. Green Pepper ( chopped )1 clove Garlic2 Tbls. Canola Oil1 Can Diced Tomatoes2 Cans Red Beans1 C. Arborio Rice3 Johnsonville New Orleans Andouille3/4 C. Chicken Broth2 C. water1/2 Tsp. Emeril Bayou BlastPepper to taste
Directions
Cook the Arborio rice in 2 C. water. In dutch oven Saute onion, garlic & green pepper in 2T. canola oil. Add 3 sliced Andouille sausages to pot. Add 1 can diced tomatoes, 2 cans red beans & 3/4 C. chicken stock. Then add cooked rice, add spices to your taste. Cover, simmer for approximatly 45 mins.
