Turkey Sausage and Lentils

Ingredients
Directions
2-3 tbsp olive oil1 medium onion - chopped fine1 glove garlic - smashed1 lb lentils8 links Turkey Sausage1/2 cup red wine1/4 cup water
Heat 1 tbsp olive oil in large sauce pan
Add onions and saute until soft
Add lentils and generously cover with water
Cover and let simmer gently for 30 minutes or until lentils are soft - may need to add more water
Heat remaining oil in large pot or pan
Add smashed garlic and let cook for a minute
Add sausages and brown on both sides
Add wine and water - let bubble up
Cover and let simmer gently for 15 minutes or until sausages are cooked through
Smash the softened garlic into the sauce and pour all over lentils
