Shrimp Stuffed Mushroom Caps

2 Tbsp. Extra Virgin Olive Oil1/4 c. Chopped Onion1 Handful of baby spinich chopped1/2 Minced garlic clove1 Tbsp. Herb and Garic cream cheese2 Tbsp. Partly skimmed mozza cheese5 Large Mushrooms
1. Set microwave oven to 350 degrees.
2. Pull the stems from mushrooms and set caps in small pan upside down. set aside.
3. Saute onions, spinich, and garlic in olive oil.
4. Add cream cheese. Saute for a couple minutes.
5. Disperse mixture into each cap evenly.
6. Top with mozzerella cheese and cool for approx. 12 minutes. or until mixtures is sizzling and cheese is golden.
Measurements are estimates. Add herbs and spices to taste! Enjoy!
