Curried Lentils

Ingredients
1 cup Red Lentils1 tsp. Salt1/4 cup Butter, unsalted1 large Onion1 clove Garlic minced1-2 tsp. Curry powder2 TBS. Lemon Juice1 TBS. chopped Parsley2-1/2 cups Water1 Bay Leaf
Directions
Bring to a boil and simmer 20 minutes: 1 cup red lentils, 2-1/2 cups water, 1 bay leaf, and 1/2 tsp. salt.

Meanwhile, Saute together: 1/4 cup butter, 1large onion chopped, 1 cloved minced garlic.

Add: 1tsp. salt and 1-2 tsp. curry powder. Fry briefly. Add to cooked lentils. Mix in 2 TBS lemon juice and 1 TBS chopped parsley.

Tastes great with Basmati rice.

    Wow! that is really good. I've never had lentils before and every week I am trying to cook at least 2 new meals. This seemed like a really easy recipe and it was. I used Vidalia onion which made the onion flavor milder, but still excellent. I will definitely make this again. - 6/28/07
