Ingredients:Post Bran Flakes Cereal, 2 cup (1 serving) *Flour, white, .5 cup *Wheat flour, white, bread, enriched, .5 cupBrown Sugar, .25 cup, packedEgg, fresh, 1 large Cinnamon, ground, 1 tsp Blueberries, fresh, 1 cup *Canola Oil, 3 tbsp*Pumpkin Pie spice, 1 tbsp Coconut, raw, .25 cup, shredded Baking Powder, 2 tsp Buttermilk, lowfat, 1 cup
Preheat oven to 400.
Grease 12 cup muffin pan.
Combine cereal, milk, oil, egg and coconut in bowl. Let sit for 5 minutes. Stir in already combined flour, sugar, baking powder and cinnamon/pumpkin pie spice. Stir together till just combined. Fold in blueberries.
Bake 25 minutes at 400 degrees.
