Ingredients
2 Pork Tenderloin1/4 C Lemon Juice1/4 C Extra Virgin Olive Oil4 Cloves Garlic minced1 Tbsp Ground Oregano1/4 tsp Salt & Pepper
Directions
Cut tenderloins into cubes and marinade for 10 mins or 24 hrs.
Divide marinaded cubes onto skewers and broil 12 mins., turn, baste with marinade and continue broiling for another 12 mins.
Serve with Pita bread & Tzatziki (optional)
Makes 6 - 4oz servings

    We did this on the BBQ last night. I used fresh oregano. Simple and yummy. I also froze some in the marinade, uncooked, for future meals. We marinaded for about 2.5 hours, and that was plenty of time. - 5/9/11
