Garlic Parmesan Baked Chicken with Mushrooms

Ingredients
6 boneless skinless chicken breasts, thawed1 large package fresh sliced mushrooms1 cup frozen seasoning blend1 cup reduced-fat grated Parmesan2 Tbsp margarineSeasonings: Morton's Lite Salt, black pepper, garlic powder, Tony Chachere's salt-free seasoning (or other salt-free seasoning)non-stick cooking spray (canola or olive oil)
Directions
1. Preheat oven to 375°F.
2. Over medium heat, sauté mushrooms and seasoning blend until lightly brown. Drain liquid and set aside.
3. Melt margarine in a cup and drizzle on the bottom of the pan. Add some water as well -- this will ensure that the chicken does not dry out while baking.
4. Place chicken breasts in the pan and season with lots of garlic and grated Parmesan. Add salt, pepper, and Tony's seasoning to taste.
5. Flip each breast over and coat that side with the seasonings.
6. Add mushrooms to the pan, distributing throughout empty space and on tops of chicken breasts.
7. Bake uncovered for 15-20 minutes, or until chicken reaches 170°F in the middle.
8. Sprinkle any leftover Parmesan over the top of the chicken and bake an additional 5 minutes.
9. Enjoy!
