1 cup grated Carrots, raw, 1/2 cup grated Zucchini2 slices whole wheat bread, crumbled12 Walnut halves, chopped or ground1/2 cup grated Onions, raw,1 whole Egg, )1 Egg white, 1/4 cup Mozzarella Cheese, part skim milk, 1/2 cup Applesauce, unsweetened, .NONSTICK VEGETABLE COOKING SPRAY
In medium bowl combine carrot, breadcrumbs, ground walnuts, onion and zucchini.

Add egg, cheese, salt and pepper if desired to taste

Divide into 8 balls and flatten to form pancakes.

Heat a large skillet coated with non-stick spray. Cook pancakes over medium heat, about 6 minutes, turning to brown both sides.

Arrange on a serving platter with apple sauce on the side.

Makes 2 servings of 4 pancakes each.
