1tbsp olive oil1 tbsp smart balance butter2 cups brown rice1 can diced green chili peppers3 cloves garlic, minced1 med onion, diced2 cups diced tomato4 cups chicken broth
heat olive oil and butter in skillet. Add rice and brown few minutes (yes, even brown rice needs to be browned). add onion, garlic, chilies and stir couple minutes. Add broth and tomatoes (diced), cover and cook until rice is tender. May need to add more broth or water. serves 8
