Tofu Ginger Stir Fry

Canola Oil, 1 tbspGinger Root, 1 tspAdobo, .5 tsp Green Giant Frozen Stir Fry Vegetables, 1 bagTofu, extra firm, 227 gramsSauce:Marukan Rice Vinegar, 3 tbspKikkoman Lite Soy Sauce, 3 tbspWater, tap, .67 cupKame Peanut Satay, 3 tablespoons
Heat the oil in a wok. Add garlic and ginger and stir fry for 30 seconds. Add frozen vegetables and stir fry for several minutes. Add drained tofu. (I bought the pre-cubed, highly recommended!) Stir fry for about 5 minutes.
While this is stir frying, mix the sauce ingredients together. Pour the sauce over the stir fry, and bring to boil. Let simmer until sauce is thickened.
Serve over Chinese noodles or rice. Makes 2 very generous servings.
