Lentils and Vegetables

Ingredients
1 Cup Lentils1/2 Cup Onion, chopped1/2 Cup Carrots, chopped1/2 Cup Celery, chopped1/2 Cup Summer Squash, chopped3 Cloves Garlic2 Tbsp Olive Oil3 Cups Water
Directions
Saute Onions, Carrots, Celery, Summer Squash, and Garlic in Olive Oil. Combine Lentils and Water in medium saucepan and bring to boil. Reduce to simmer and add sauteed vegetables and simmer for 20-25 minutes or until water evaporates.
