Peel 10 fresh tomatoes - remove the skins5 Onions - regular size, dice 3 cloves of Garlic - dice2 cups of Mushrooms sliced5 Basil leavesDash of Salt and Pepper1 Yellow / Red or Green Bell pepper sliced2 stalks of Celery3 tablespoons of Olive Oil
Add the diced onions, celery, garlic, mushrooms, bell pepper in a frying pan containing the olive oil, cook until soft (tender), then transfer to pot and add the tomatoes, cook over medium heat for 10 minutes and then add salt, pepper and basil, cook at least 30 to 60 minutes.
