Soybean Falafel

Ingredients

1 (15oz) can Soybeans - drained, reserve liquid1/2 large onion - chopped in chunks6-8 cloves garlic1 tsp sesame seeds2 tsp cuminbread crumbs from 1 slice bread (or about 3 tbsp flour)salt and pepper to taste
Combine beans, onion, garlic, sesame seeds in food processor and process till a thick paste consistency. Add liquid as needed to keep from clumping too much.
Put in bowl, process the slice of bread to make crumbs. Add crumbs and cumin to bean mix and combine.
Refrigerate at least 30 minutes.
Form in to ping-pong sized balls, put in lightly oiled (or use non-stick spray), pre-heated skillet over medium heat. Flatten slightly into patties and cook about 2-3 minutes per side.
Serve as side item, main course, in sandwiches, or with salad.
Traditionally served with tahini sauce, but try other sauces from fat-free sour cream, to tzitki, to ranch dressing.
