Breakfast Quiche Muffin

Ingredients
2 Cups of Egg Beaters3 cups of fresh spinach (chopped)5 oz of sirloin steak (chopped)4 fresh mushrooms (diced)1/2 cup raw white onion (diced)1/2 cup of 2% fat cheddar cheese
Directions
makes 12 mini quiches, using a muffin tin

mix all ingredients together in a bowl or large measuring cup (easier to pour into the muffin tin)
spray muffin tin with zero calorie cooking spray
do not fill to top of muffin tin, leave a little bit of room at the top, so it doesn't cook over.
Bake on 350 for about 20 minutes
Refrigerate
Microwave one each morning for a quick, healthy, delicious breakfast.

    Didn't have Egg Beaters, so used 2 cups of egg whites and used leftover seasoned chicken breast in place of the sirloin steak. This was really good!! And easy! And it was a really nice change from the usual egg omelet! - 2/2/10
