Low-Cal Cornbread

Ingredients
1 cup cornmeal 1/2 cup whole wheat flour 1/2 cup unbleached flour 2/3 cup Splenda 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup skim milk 8 Tablespoons light margarine 1 each egg 2 each egg whites
Directions
Preheat oven to 350 and melt butter in large cast iron skillet (or 9" round cake pan)

Mix in large bowl both flours, cornmeal, splenda, baking soda, salt.

Mix milk in with the melted butter, then add the egg and egg whites. Mix well

Add dry ingredients to wet ingredients and mix until very few lumps
remain.

Bake for 30-40 minutes.

Cut into 16 wedges.

    Where on earth do people get these calorie counts? This is the third cornbread recipe I looked at where the stats were way off. I got 156 calories in a "serving" though I think 1/16th sounds very very tiny. - 2/2/11

    1.All values are from the SparkPeople database except the Blue Bonnet Light Margarine I used. That I input myself using the nutritional panel on the box.
    2. You have not even made the recipe. 1/16th is not tiny; as the recipe rises in my skillet, it makes big slices that are perfectly sized.
