Almond Flour Cookies

Ingredients
2 cups almond flour1/2 cup of Splenda1 stick of butter or margerine softened1/4 to 1/2 tsp of salt (if using salted butter do not include salt)1 tsp of vanillia extract1 tsp of almond extract
Directions
To make almond flour is very simple. You need about 1 to 2 lbs of raw almonds and a blender. Place roughly a handful to two handfuls of almonds in the blender and put on a "crumb" setting. After you see 90% of the nuts turn to flour than it is done.

Preheat oven to 300 degrees

Mix all of the ingredients together. Form small balls and place on a greased cookie sheet. Place in the oven for 20 mins.

Makes anywhere from 15 to 20 cookies dependind on the size you make the balls.

    I found this to be too sweet and I did not use half a cup of splenda, I used LESS! The concept was good, but I think I will need to cut down even more of the sugar. - 3/3/13

    These little cookies are Awesome!! The perfect treat to satisfy my sweet tooth. My recipe made 27 cookies, I must have rolled them smaller than you did. I like a thinner, crispier cookie, so on the second pan I flattened them out. Very good!! Thanks!! - 2/3/13
