Ingredients
5 lbs bottom round, cubed 1 medium onion cut coarsely2 cup celery, chopped6 medium carrots, sliced 6 medium potatoes, cut in quarters3 ears of corn, cut in 3rds1 head of cabbage, cut in large chunks2 small zucchinis, sliced3 ripe tomatoes1 T salt1 tsp whole cumin3 cloves garlic, peeledabout 16 cups water
Directions
Set aside: cabbage, zucchini, and tomatoes. Place the remaining ingredients In large pot. Heat to boil then cover and reduce to medium. Add the 3 remaining ingredients during the last 30 min. Make 16 2-cup servings.
