Basic fish cakes

Ingredients
250 g hake fillets400 g minced pilchards100 g onion, fineley chopped100 g grated carrot (half a cup)5 ml olive oil (1 tsp)2 thin slices bread, crust removed1 egg beaten30 ml finely chopped parsley (2 tbls)10 ml fish spice (2 tsp)2.5 ml lemon pepper (appr. half tsp)oil for shallow frying
Directions
Sautè onion in oil.
Soak bread in a little milk.
Mix together the fish, onion, carrot, bread, egg, parsley and seasoning.
Shape mixture into patties.
Place in fridge for 10 - 15 minutes.
Heat oil in frying pan and fry patties until golden brown.
