Irish Apple Pie

Ingredients
Pastry:1 2/3 cups flour1/4 teaspoon baking powder1/2 teaspoon salt1/2 cup sugar1/2 cup unsalted butter1 egg, beatenFilling:1 1/2 pounds (3 large) apples, peeled, cored, sliced2 tablespoons sugarpinch cinnamon and clovesmilk and sugar for sprinkling on top of pastry
Directions
Mix dry ingredients in a bowl, cut in the butter with a wire blender, add egg and mix with a fork. Turn out onto a lightly floured surface and knead until smooth. Divide in half and roll out into two sheets of pastry dough. Put one sheet into a 9 inch pie plate.
Arrange sliced apples in the dish and sprinkle on sugar and spices. Cover with the 2nd sheet of pastry, sealing the edges with milk, and putting a steam hole in the top. Brush the top pastry with milk, sprinkle with sugar.
To make this a deep dish apple pie, use only half the pastry. Lightly butter the pie plate, arrange the apples, and proceed.
[Put the second sheet between waxed paper rounds, put in a plastic freezer bag, and freeze until you next time.]
Bake at 35oF for 30 minutes, then another 15 minutes at 300F.
