Oven Fried Chicken Breasts

Ingredients
6 whole boneless skinless chicken breasts3 Tbsp light mayo2 tsp Dijon mustard3/4 cup panko bread crumbs1/4 cup grated parmesan1/4 tsp seasoned salt1/4 tsp oregano1/4 tsp sage1/4 tsp thyme1/4 tsp basil1/2 Tbsp onion powder1/2 tsp garlic powder1/2 tsp dried parsleyCanola oil non-stick spray
Directions
Cut chicken breasts into halves, pat dry. Mix mayo and mustard in one bowl. Mix bread crumbs, parmesan and seasonings in another bowl. Put cooking racks in two baking pans, spray with non-stick oil spray. Rub chicken breasts with mayo/mustard mix (it doesn't take much), then dredge in bread crumbs. Place evenly spaced on racks, spray chicken lightly with non-stick canola spray. Bake at 350 for 45-60 minutes until browned. Makes 12 one half breast (approx. 4-5 oz.) servings.
