Ground Turkey W/ Eggplant

Ingredients
1 lbs Ground Turkey2 Slices Bacon cut into 1 inch pieces1 Eggplant cut into 1 inch cubes-peel on or off, your choice2 Cups Fresh Mushrooms PiecesAny Other Veggie You Wanna AddSalt and Pepper to taste
Directions
Heat large skillet. Fry up bacon pieces. Add all the veggies, stirring occasionally. You may need to add a little water to the veggies at this point. Cover and cook until veggies are nearly done then add turkey. MIx in well and keep stirring until turkey has browned. Turn down heat and simmer until any liquid has cooked off. Add Salt and pepper to taste.
