Kelly's Smoked Salmon, Ricotta and Wasabi

Ingredients
100gms thinly slices smoked salmon1-2 tbsps Wasabi paste125gms low fat Ricotta Cheese1 long crusty French Baguette, cut into thin-ish slicesolive oilGround black pepper (optional)Dill weed
Directions
Thinly slice the crusty french baguette, lightly spraying with olive oil. Bake in moderate oven for around 15 minutes or until golden brown and toasted.

Once cooled, top with a light spread of ricotta cheese, add a thin piece of smoked salmon, then a tiny dash of wasabi and then a small piece from the sprig of dill weed.

Should make around 16-18, depending on thickness of bread slices, etc.

Serve on a platter.

    Excellent! I made these the night before a party. I mixed dill into the ricotta cheese, then added a bit more dill on top. The bread was a bit soggy. However, the whole recipe is awesome. Will definitely make again and assemble shortly before serving. - 12/23/10
