1c brown sugar1 tsp ground cinnamon2c wheat flour1 tbsp baking powder1 tsp baking soda1/2 tsp ground nutmeg1/4 tsp salt1/4 tsp ground allspice1c packed shredded zucchini3/4c fat free plain yogurt2 tbsp unsweetened applesauce1 tsp vanilla extract1/2c Egg Beaters egg whitesPAM cooking spray
Preheat oven to 350
Combine flour, brown sugar, cinnamon, baking powder, baking soda nutmeg, salt and allspice in mixing bowl. Create well in center. Combine zucchini, yogurt applesauce, vanilla and egg whites and add to flour mixture. Beat 2 minutes. Spray bread loaf pan with PAM, pour mixture into pan and bake at 350 for 50 minutes or until toothpick comes out clean. Cut into 16 slices,
