Apple Muffins loaded with protein and fiber!

Ingredients
1.5 C. King Arthur White Wheat Flour0.5 C. Wheat Germ4 tsp baking powder1 tsp baking soda1 tsp salt4 lg eggs0.5 C. brown sugar0.25 C. canola oil1 C. Unsweetened Applesauce1 Can white beans rinsed, drained and pureed
Directions
Preheat oven to 350. Spray mini muffin tins with pan spray.

Puree white beans adding up to 2 tbsp water if necessary.

Mix together flour, bran, baking powder, baking soda and salt. In another bowl whisk together the eggs and sugar until well combined. Wisk in oil, bean puree, applesauce. Fold the wet into the dry being careful not to over mix.

Fill the mini muffin tins 1/2 way. Bake for 20 minutes.

Makes 48 mini muffins. This recipe is best suited for mini muffins. When making larger muffins they don't set up as well.
