Thai Chicken Coconut Soup

Ingredients
5 cans (14.5 oz) fat free chicken broth1 can coconut milk1 can sliced water chestnuts1/4 cup lime juice3 Tbsp. fresh cilantro2 Tbsp fresh basil1/4 cup fresh ginger root, julienne sliced 1 Tbsp Thai Chili Sauce2 chicken breasts, cooked and cubed1/2 cup sliced raw carrots, or baby carrots2 cups rice noodles (udon) cooked1 cup fresh bean sprouts1 cup fresh snow peas1 cup fresh sliced mushrooms1/4 cup scallions / green onions
Directions
Place first 10 ingredients in a large pot and heat through. Add noodles, bean sprouts, snow peas, mushrooms and green onions just before serving to heat through. Don't cook for too long as veggies should remain crisp. Enjoy!
Makes approximately 8 1 1/2 cup servings.
