Orange Popovers

1 cup all purpose flour2 tsp grated orange peel1/2 tsp salt3 eggs, lightly beaten3/4 cup milk1/4 cup orange juice1 tbsp butter, melted
Combine flour, orange peel and salt in a large bowl.
Whisk together eggs, milk, juice, and melted butter in a medium bowl.
Add liquids to flour mixture and stir until smooth. Cover bowl and refrigerate for at least 30 minutes. You may chill it for up to 24 hours if you wish.
Preheat oven to 375. Grease and flour 9 cups of a muffin tray. Put some water in the remaining 3 cups so they do not scorch.
Ladle 1/4 cup of the batter into each muffin cup. Bake 30-40 minutes until the popovers are browned and firm. Cool slightly and serve hot.
Makes 9 small popovers. Serve with jam.
