Cheesy Mash Cauliflower

1 small head Cauliflower, chopped into small pieces4 Tbsp Philadelphia 1/3 Less fat cream cheese1/2 tsp Salt1/4 tsp White Pepper1/2 Cup low-fat shredded cheddar cheese2 Tbsp Parmesan Cheese1/2 tsp PaprikaGarlic cloves (optional, I tried it with the garlic and was too much garlic tastes fine without it!)
Boil Cauliflower till tender. Process cream cheese in food processor or blender. Add in cauliflower and garlic blend until smooth. Add in Parmesan, salt and pepper.
In a small 1 QT greased pan pour in cauliflower mixture. Sprinkle paprika and shredded cheddar on top. Bake at 350 for 20 mins or until bubbly.
Makes 4 servings.

AHHHHH...MAZING! This was so good I almost felt like I shouldn't have been eating it!I did add the Garlic as my husband and I LOVE Garlic but would be super tasty without it. It was a little mushy next time will dry with paper towel before blending. I would eat this as a meal it's THAT good! - 1/6/12
