Chicken Orzo

Ingredients
1 c. water1 can chicken broth12 oz. boneless skinless chicken breast, cut bite sized1 1/4 c. whole wheat orzo, uncooked1 c. frozen peas2 oz. Monterey Jack cheesesalt, pepper, and dried herbs to taste(I use basil and thyme)
Directions
1. Brown chicken in a skillet sprayed with cooking spray. Sprinkle on salt, pepper and whatever herbs you like.

2. Add water and broth to pan, bring to a boil and pour in orzro.

3. Cover and cook, stirring occasionally, until orzo is soft and almost all liquid is absorbed.

4. Remove from heat and mix in peas and cheese. Stir until cheese melts. Serve immediately.

    Love this idea! I kept the chicken breasts whole, and baked them in the oven with cumin, paprika, s&p. Instead of peas, I used corn (personal preference) and I added onions, garlic, and spices to the broth for the cooking process. Roasted some asparagus to go along with it! - 3/27/14
