Cajun Okra & Tomatoes

3 oz. andouille, cut into 1/2" cubes1 small onion, chopped1 large jalapeno, seeded (if desired) and chopped1 clove garlic, minced2 c fresh okra, sliced1 c fresh tomatoes (I used cherry tomatoes), choppedCajun SeasoningWater
Render out the sausage over medium-low heat until some of the fat cooks out into the pan. Add the onion, pepper & garlic and saute until onion is translucent. Add the okra, seasoning and approx. 1/2 cup of water. Bring to a boil, cover, reduce heat and simmer about 20 minutes or until okra is tender. Add the chopped tomatoes and taste for seasoning and adjust as desired. Cover again and cook about 5 minutes or until tomatoes are just tender.
I don't really know how many 1-cup servings this makes, but it makes two servings for me, so that's how I calculated the nutritional info.
