Turkey Avocado Rollups

Ingredients
1/4 pound thinly sliced deli turkey breast1 ripe avocado, peeled, pitted and sliced½ c. Plain greek yogurt½ c. Cucumber, peeled & diced½ c. Onion1/4 c. kalamata olives, pitted & diced2 t. capersRed leaf lettuce
Directions
Mix cucumber, onion, olives & capers into yogurt. Wash and dry individual lettuce leaves and lay them flat. Add sliced turkey and spread with thin layer of yogurt mixture. Top with avocado slices. Roll up.

Serve immediately, or wrap in plastic wrap and refrigerate. Makes 4 lunch-size portions - paired with soup makes a grreat lunch.
