* Onions, raw, 2 cup, sliced (remove) * Green Peppers (bell peppers), 2 cup, strips (remove) * *Potato, raw, 1 medium (2-1/4" to 3-1/4" dia.) (remove) * Red Ripe Tomatoes, 2 cup, chopped or sliced (remove) * *Hot Chili Peppers, 1 pepper (remove) * *Canola Oil, 2 tbsp (remove) * *Cumin seed, 1 tsp (remove) * Salt, 0.75 tsp (remove) * Chili powder, 1 tsp (remove) * Turmeric, ground, 0.25 tsp (remove) * *garam masala, 0.5 tsp (remove) * Kasuri methi about 2 tbsp
Peel, cube and fry the potatoes in oil till golden color. Keep aside. Cut capsicum/green bell pepper and onions lengthwise, chop tomatoes and kasuri methi fine. Heat 2tbsp of oil in a pan and add jeera/cumin. When it splutters add onion and capsicum and fry till golden brown. Add tomatoes and fry till mushy. Add potatoes and all the other ingredients and fry on a slow fire till everything is well roasted.
