One Minute Chocolate Flax Muffin

Ingredients
1-2 tsp coconut oil (or butter)1/4 cup ground flaxseed1 tsp baking soda1 egg1-2 tbsp chocolate syrupsweetener(can substitute blueberries, raspberries or other fruit for chocolate syrup or leave plain)
Directions
(Adapted from a number of similar recipes - I don't claim authorship) Mix all ingredients in a coffe cup or small pyrex container with a fork. Place in microwave and cook on high for 1 minute. Remove. Muffin will appear too moist at first, but let it sit for a minute or two and all moisture will be absorbed. Empty from cup, spread with butter or sugar-free jam if desired, and enjoy.
