Low-Cal Zucchini Bread

Ingredients
1.5 c flour1 whole egg1 egg white1/2 c unsweetened applesauce1 tbsp vegetable oil1.5 c packed shredded zucchini.5 c packed brown sugar.5 c splenda.5 tsp salt.5 tsp baking soda.5 tsp baking powder1.5 tsp ground cinnamon1.5 tsp vanilla extract
Directions
Preheat oven to 325 degrees. Grease cupcake pan. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl. Beat eggs, applesauce, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini until well combined. Pour batter evenly into muffin pan. Bake for about 10 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
