Zucchini & Chick Pea Salad

Ingredients
(1) 16-oz. can Garbanzo Beans (Chick Peas)(1) Cooked Ear of Corn (cut corn from cob)(2) Cups Raw Zucchini (cut in bite size pieces)1/2 Red Onion (diced)1/4 cup Olive Oil1/2 lemon or (2 Tbsp)
Directions
In large bowl mix 1 can of drained Garbanzo Beans, approx. 1/2 cup corn, 2 cups of raw zucchini, 1/2 of a red onion. In separate bowl add 1/4 olive oil and juice from 1/2 of lemon and mix well. Pour over vegetables and mix well. Refrigerate. Makes 24 - 1/2 cup servings.

    My husband even liked this. I didn't put the corn in. Put a few tomatoes in it for color. And I added dill. Yum. - 4/3/10
