Ingredients
2c whole wheat flour2c chopped zucchini1.25 c sugar1/2c unsweetened applesauce1/3 c water1.25 tsp baking soda1 tsp salt1 tsp ground cinnamon1 tsp ground cloves1 tsp ground nutmeg1 tsp vanilla3/4 c liquid egg substitute
Directions
Heat oven to 350. Spray 13x9x2 pan with PAM. Beat all ingredients on low speed 1 minute. Beat on medium 2 minutes. Pour into pan. Bake 45 to 50 minutes or until toothpick comes out clean. 16 servings, 2 WW pts each.

    This turned out nice and moist. I substituted half the whole wheat flour for almond flour, reduced the sugar a bit, and veganized it by using flaxseed meal instead of eggs. My only complaint would that the nutmeg comes out too strong, would reduce it and add more cinnamon next time. - 9/15/10

    I made this today--adding 1Tblsp.each of wheat germ and flaxseed. I put it into a Bundt pan and baked it for 50 minutes. It was very good. I will use this recipe from now on instead of my full fat version. Thanks! - 7/30/10
